Meals & Services
For many of Spring House’s guests the true meaning of a vacation is time away
from the everyday meal-related chores of shopping, cooking, serving and clearing up.
If this sounds like you, then why not consider our All Inclusive Plan with breakfast, lunch, afternoon tea, pre-prepared dinners,
and late night snacks prepared and served by our chef and her staff. A Welcome Dinner
is served upon arrival. On some evenings you may prefer to remain at Spring House and
enjoy pre-prepared meals that you have selected in advance. On other evenings, we
invite you to go out and experience some of the 25 restaurants that we
have on our island. Many have special nights, music and other festivities, and you
can meet locals and other visitors enjoying life on beautiful Bequia.
Spring House's All Inclusive Plan also provides
a 24-hour open bar. A group of eight people will easily consume 8 or more drinks
each per day in our warm weather, which translates into an astounding 448+ drinks per
week or 19 cases of beer, soft drinks and mixers. A full description of our meal plan

If you would prefer our Independence Plan, we are happy to provide you with a Welcome Dinner and First Morning Breakfast to
help you get settled in before you provision the villa. Some local supermarkets will
fill and deliver a provision list that you provide in advance for a small fee. We
recommend Doris’ Fresh Food (Tel: 784-458-3625).
Drinks
A full stock of standard spirits, house wines, ice-cold beers, soft drinks
and mixers is always available together with ice, limes, etc. Help yourself
night and day.
Complement the selection with your own duty-free purchases or a selection of
fine imported wines available for purchase from our housekeeper.
On a shaded verandah, a glass of Chianti in one hand, a good read in the
other, life is beautiful…
Meal Plan
Our Cook will prepare bountiful and delightful meals for you throughout the
day, including those wonderful midday snacks we are known for — and
it’s all included in your rate plan.
You can plan the menu with her, or leave her to prepare delicious meals from
her own menu, with local food, excellent pastas, barbecues, etc.
Please let us know well in advance of any special dietary needs, requests or
allergies. We will try to accommodate reasonable requests.
Breakfast: early – 10.00 am
Served in the Dining Room, or on the Breakfast Patio.
Buffet style with choice of fresh fruits (often from our own orchards),
yoghurt, juices, selection of cereals, coffee, teas, breads, toast, preserves, etc.
Omelettes, waffles, pancakes, bacon, sausages, local foods. On request,
we can include a variety of cheeses and sliced meats.
Lunches and/or Picnic Baskets
Usually served poolside, weather permitting.
If you’re going to be at home for the day, then a light lunch can be made
for you on request. Picnic baskets are also available. Please make arrangements in
advance with our Housekeeper. No meal substitutions please.
Afternoon Tea: 4pm – 5pm
Served in the Drawing Room.
Choice of teas, coffee, home baked cakes, finger sandwiches, biscuits,
cookies and breads.
Evening Cocktails: 6pm
Set up in the Gazebo Pool Bar. Please help yourself.
Spring House Rum punch with snacks, chips, nuts, etc.
Welcome Dinner: Upon Arrival
Served in the Dining Room.
On the day or evening of your arrival in Bequia, we appreciate that you will have
been traveling for many hours and would probably prefer to relax and become acquainted
with your villa rather than being obliged to make meal arrangements. Our Cook will
prepare and serve a buffet meal of cold meats, salads, pasta, fruits, home-made breads
and desserts. Please let us know in advance if you have special requests and/or
requirements, or if your arrival times change.
Evening Meals &mdash Pre-prepared during your stay
We have visitors from many parts of the world and groups of many different
compositions. We have Europeans who like to start eating a formal dinner with
wine at 10 pm; we have family groups from the USA with young children who like
to eat informally at 6 pm. We have people with allergies, preferences, likes
and dislikes, and everything in between. We also received input from many
guests that they wanted the privacy of not having staff around in the evenings.
Our guests like to be able to eat at home on some evenings but wanted to go out
on some evenings without feeling that they had already paid for a meal or being
obligated to eat in.
In response to this input, Spring House's executive chef has composed a
selection of evening meals from which you can choose … in advance of
coming to stay. These are fairly simple, but interesting, meals that should
appeal to everyone in your party. During the day our cook will prepare the meal
and leave it for you to self-serve at your convenience, using your own
kitchen or the BBQ. Our staff will do the clean-up the following morning.
This allows flexibility for you to eat when you wish, not to have to spend any
of your vacation shopping for or preparing food, and maintain your privacy from
staff during the evenings. In addition to your Welcome Dinner, please choose
3 meals if your stay is 7 nights, 5 meals if you are staying 10 nights, or
7 meals if you are staying 14 nights. One menu selection per night – and
no substitutions please.
Menu 1: Four Cheese Lasagna, crusty French bread, served with Greek Salad. Tropical mousse.
Menu 2: "Catch of the Day", locally caught fresh fish and skewered vegetables, all prepared for grilling. Baked jacket potatoes. Lemon or lime pie.
Menu 3: Creole Chicken served with Calypso rice (seasoned vegetable West Indian rice). Tossed garden salad. Queen of Pudding served with warm Punch de Crème topping.
Menu 4: "Shake & Bake" Chicken served with scalloped potato and orange candied carrots. Spring House homemade ice cream.
Menu 5: Grilling Platter of beef burgers, chicken and sausages, marinated and seasoned ready for the BBQ. Served with Caesar salad and fresh, homemade bread. Locally grown fruit salad.
Menu 6: Prime Tenderloin Steaks from the USA, marinated and prepared for grilling. Served with Corn on the Cob and cold pasta salad. Bequia cheesecake.
Menu 7: Seafood Crepes served with a melody of lightly steamed vegetables. Coconut cream pie.
Menu 8: Spaghetti Bolognese – delicious, homemade meatballs with a West Indian flair, served over spaghetti or ziti. Served with crusty French bread and accompanied with a Garden Salad. Chocolate Amaretto snaps.
Menu 9: Tofu in Black Bean Sauce served over jasmine rice and complemented with oriental vegetables. Angel Food Cake covered with seasonal tropical fruit sauce.
Evening Meals &mdash Other Nights during your stay
Bequia is fortunate, primarily because of the visiting yacht trade, to have a
large and varied selection of restaurants for such a small island. From American pizza
to the finest French cuisine, from rotis in a beach bar to Mexican to local foods, we
have it all. We are happy to make recommendations and your reservations.

When self-catering your own meals, we invite you to experience our unique
‘supermarkets’ to choose the foods that you like, and use the full size,
separate, guest kitchen (well stocked with basic items) to prepare your own evening
meal. In fact, many of our guests are amateur chefs who enjoy the social side of
cooking with friends. We often see visitors enjoying fish that they have caught
offshore that very day.
Our chef and her staff will be happy to assist you with getting the meal
pre-prepared during the afternoon so that it is oven or grill ready when you are.
And of course … don’t even think of doing the washing up.
By the time you get up the next morning the kitchen will be spotless again.
Late Snacks
Self-service in the kitchen.
Home made ice creams, cakes and breads. Cheese and biscuits, jams, peanut
butter, coffee, teas and similar items.
Included Services
House Manager — Our house manager, always resident on Bequia,
is available to address any concerns or issues that you may have with the
booking or planning of your holiday or accommodation. In addition, if issues
arise once you are here that cannot be resolved with the housekeeper, the
house manager will be happy to help you sort them out. Please feel free to
ask and then … no worries.
Housekeeper & Concierge service — Our housekeeper is always
ready to provide advice and assistance to make your holiday stay at Spring
House the best that it can be. Whether you need directions to the best beach
or restaurant, have meal requests or have another problem you wish to
discuss, the housekeeper is available to help you.
Cook — Our cook is more than just a cook. She is experienced,
chef trained, and ready to serve you seven days a week. All our foods are
freshly prepared from the finest ingredients available. Please feel free to
discuss the menu with the cook upon arrival and provide her with the feedback
that will make your stay at Spring House the most enjoyable that it can be.
Maid service — Spring House employs two maids to provide
everyday service during your stay. Our maids are experienced and provide the
room and laundry services that will allow you to enjoy your holiday free from
domestic chores. Please fee free to discuss your special requirements with
the housekeeper who will pass them on to the maids.
Bellman services — Our Caretaker/Gardener is resident in his
own company house on the Spring House estate and adjacent to the main
property. He is available to assist you with bellman services upon arrival,
loading your jeep for the beach or any general help you may require. He is
also available after hours if you have problems of an immediate nature.
